Polenta with Kale and Marinara

I've always tried it in restaurants and loved it but hadn't tried it at home.  Just recently I started buying Trader Joe's Organic Polenta. I've been using it with a kale, marinara and Italian Tofurky sausage and it comes out so good!

Here's my version:

Dice and saute onions then add Tofurky Italian sausage with coconut oil.


While that is browning cut and wash kale.


Set onions and sausage aside. Cut polenta and place in skillet. Add more coconut oil if needed.


Flip polenta to heat the second side. Then add onions and sausage back to the pan. Add pepper.


Add Kale and cover. Lower heat to low. in about 5 - 10 mins. Add Marinara sauce and cover again for another 5-10 mins.


Once the Kale turns bright green serve.



Then it got me thinking I can make it from scratch. So I started checking recipes online.

Basic Polenta Recipe

Ingredients

6 cups water
2 teaspoons salt
1 3/4 cups yellow cornmeal
3 tablespoons unsalted butter

Directions

Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.
